12 minutes 5 ingredients one pot

Well it's not exactly 5 ingredients because one of the ingredients is tapenade (which itself has 5 ingredients - but who doesn't have tapenade on hand?!).

I needed a dish that would cook quickly and easily for a dinner event at home. I wanted something that paired with a very nice Condrieu (the L'Enfer that we bought at Veritas in Dallas).

Condrieu is a Northern Rhone wine made entirely from Viognier. It pairs nicely with fish, but has enough body to stand up to bold flavors too. The recipe is adapted from a Jamie Oliver recipe that uses firm white fish. We used scallops instead - sourced from the always excellent TJ's Fish Market in Dallas.

Ingredients (US measures)

1 1/2 cups jasmine rice, rinsed in several changes of water until the water runs clear
2 1/4 cups water (I don't count this is an ingredient!)
6 T black olive tapenade (divided use)
4 large scallops, each cut into 6 individual pieces
2 dozen cherry tomatoes, halved
20 basil leaves, chiffonade (divided use)
Salt/pepper to taste (I don't count these either!). Be careful with the salt - depends on how salty the tapenade is.

Method

Put the rice and water into a large skillet (I used carbon steel) that has a lid. Cover, bring to the boil and cook gently, over low heat for 4 minutes. Stir in 1/2 the tapenade. Add the tomatoes, cover again and cook gently for a further 4 minutes. Add the scallops and 1/2 of the basil, stir, cover and cook for a further 3 minutes. Off heat ad the rest of the tapenade, stir gently, top with the remaining basil and serve.

Yeah, it is actually more than 12 minutes end to end. You do have to cut the tomatoes, chiffonade the basil and cut the scallops. But it really isn't much work - and it comes out well too.

Soba noodle salad with clams

We wanted something light for dinner this evening. Having recently had cold soba noodles as a salad at a nice restaurant, I thought it might be nice to try to reprise it. It didn't come out the same, but it was awfully good.
Here's what it looked like

The wine was a Tavel Rose.

Ingredients - Dressing

1/4 cup soy sauce
1 t toasted sesame oil
8 scallions - white and light green, sliced thinly
Juice of the core of 1 Cara Cara orange
1 t finely minced ginger
3T Rice wine vinegar
1t dry sherry
1T granulated sugar (to taste)

Method - Dressing

combine all the ingredients, taking care to keep the scallions whole. Set the dressing aside.

Ingredients - Salad

Supremed segments of a Cara Cara orange. 
4 oz soba noodles
1 carrot shaved into strips using the vegetable peeler
4T roasted peanuts
12 clams steamed open
Some lettuce leaves

Method - Salad

Cook the soba noodles in boiling, salted water for 4 1/2 minutes. Drain, rinse and allow to cool. In a non reactive bowl, combine the noodles, carrots, peanuts and the dressing.
Steam the clams until thy just open and lay them on top of the salad. They should remain slightly warm.
Serve in small bowls.

Ceviche adapted from Stephan Pyles

It's getting warm here in TX now, and we now want chilled, light, flavorful dishes. Especially those that go well with summer drinks - spritzers, margaritas and the like. Also we needed to take a dish to Madame's faculty party yesterday evening. In hunting through various recip books, I came across a scallop ceviche in a Stephan Pyles cookbook. We messed with it a bit, since we didn't want to overpower with heat. However, being cinco de mayo yesterday, we did want to make sure it had some tex-mex-ness.
Ingredients (Makes 50 little tostadas)
3/4 lb sea scallops (preferably dry) - cut into 1/4 inch cubes
1/3 cup freshly squeezed lime juice
3T orange freshly squeezed orange juice
4 medium tomatillos - husk removed and finely chopped
2 cloves garlic - minced finely
1/2 cup finely chopped cilantro
1/2 serrano pepper - minced
6 green onions - white and light green finely chopped
2 avocados, peeled and sliced into 1/4" cubes
Cayenne seasoned salt - to taste
50 corn chip shells (we used "scoopers, white corn chips")
Method
Our method was a little unorthodox. We placed the scallops and 1/2 cup of the lime/orange juice juice into a chilled bowl and carried that mixture in the bowl in an insulated bag over an ice pack to the party. It was about a 45 minute drive. That's the perfect time for the scallops to "cook" in the citrus.
The other ingredients (except for the corn chips!) were combined, and the remaining lime added to make sure the avocado would not brown. This mixture was placed in a separate bowl, also inside the insulated bag.
On arrival at the party, drain the liquid from the scallops. Gently mix the scallops into the other ingredients. Spoon the scallop mixture into the chips and serve immediately. Add a little seasoned salt at this stage if desired.
These go extremely well with margaritas, by the way!
